Paleo Frittata

Ingredients

5 Eggs, free range, pastured

1 Cup Green Beans, chopped

1/2 Cup Spinach

2 Medium Tomatoes, cubed

4 Mushrooms, sliced

1 Medium Onion, chopped

Raw Cheese: Feta, Cheddar, Monterey Jack – whatever you’re feeling, as long as it is raw and organic go for it!

Optional: Add meat of your choice – beef, chicken, lamb, goat – as long as it is organic, grass fed, and humanely raised go for it!

Substitute: Substitute your favorite veggies for those in the recipes – just try and keep the balance between starch and cruciferous – the more kale and chard the better!

Preparation

Coat pie plate with butter, in it roast veggies for ~ 20 minutes at 375 with olive oil and 1 clove of minced garlic. Mix eggs in separate bowl and add in spinach. Remove veggies from oven. Pour eggs over top of veggies, sprinkle with feta or cheese of choice. Bake in oven at 375 for ~ 30 minutes or until top is golden.

Great For

Prepping ahead. Can be eaten cold or hot, great post workout meal that will keep you burning fat and building muscle!
