    After viewing this blog I took a (yet another) look into the deep recesses of my pantry (Casey the food quality manager is coming home for Thanksgiving soon!), only to find “Lite Butter” substitute in a jar, made of fruit puree, fructose corn syrup, malodextrin, preservatives, etc, to use in baking, left over from the days when I had turned against butter…and it’s expiration date was 1997 !! Oops!! Good thing I never used it on my family…now I’m back on the butter band-wagon, good quality butter…simple foods, close to the earth, …yum….
