Easy Healthy: Avocado Corn Tomato Mescla

Ingredients

2 Ears Fresh Sweet Corn, corn cut from cob

2 Medium Heirloom Tomatoes, diced

2 Medium Ripe Hass Avocados, cubed

Sea Salt, to taste

1 Clove Garlic, minced

2 Medium Green Onions, thinly chopped

1 TBSLP Olive Oil

1.5 TBLSP Balsamic Vinegar

Preparation

Mix together avocado, tomato, corn, green onion and garlic. Sprinkle with Sea Salt to taste (you can always add more later). Add in olive oil and balsamic vinegar. Mix well. Serve as is at room temperature.

This recipe is great for those summer time dinners spent outside by the grill. A well balanced flavor packed with local Santa Barbara produce that tastes like summer!
